Menu Monday - 01/21


This Week's Menu     
    So everything is just starting to get crazy. We are shearing this weekend & then hope to start lambing this week or next. I don't know if I am ready for it all to begin, but I can't wait to see our 1st new lamb! So much to do around here.  So here is to hopefully a productive & happy week. 

Monday:

    It seems like summer is wonderful & crazy all at the same time. We did a few quick road trips & I will be gone a few more days this week. So this is what's cooking:

Monday:

        D- Pork Chops w/ Oven Fried Potatoes

Menu Monday - on Tuesday :0)


This Week's Menu     
       As always there are a few repeats from last week onto this week, because I ended up not cooking a couple of those meals, so they just get bumped to this next week.  I already know I have everything on hand to make them, so why not. The Crock Pot Santa Fe Chicken from Chef in Training was actually pretty good. I think I will make it again. 
         This week is already crazy & I am already stressed. It my birthday on Saturday. I am turning 30 on the 30th. It feels like a big number to me.  But most importantly:  We are a having almost all of our family (on both sides) in town for the weekend because we are blessing my beautiful baby on Sunday. Which means 71 people will be hanging out at my house . . . . see the stress? So we are trying to get things put together, made, straightened. & finishing the last details that you need when that many people come to celebrate. So yeah. I shouldn't even be on the computer today, but I just needed to say hi. (Hi!) Then I will get back to work. So here is what we are eating this week. 


Monday:
        B- Waffles
        L - Mac 'N Cheese
        D- Monterrey Chicken w/ Corn on the Cob


Tuesday: 
         B- Ranchos  Juevos
         L- Undecided
         D - Rice Sausage Casserole.

- Informal recipe for my dear friend Barb:    Make about 2 cups of rice, brown the sausage of your choice. I usually do 1 lb, but we like sausage. Chop up some celery. Open 2 (or whatever it needs to be moist) cans of cream of mushroom soup. Mix it all together in your cake pan. I sometimes add a little soy sauce if it needs some salt. Bake at 350 for 30 minutes or until hot all the way through. Eat & Enjoy.   It isn't fancy but we still like it every now & then.

Wednesday:  
          B- Sticky Rolls
          L - Leftovers
          D-  Beef Noodles

Thursday:
      B-     Cream of Wheat/Oatmeal
      L -    Enchiladas
      D -  Crockpot Honey Mustard Chicken


Friday: 
  B- Cream Egg on Toast
  L - Pork Fajitas
  D-  Funeral Potatoes


Saturday: 
        B. Eggs & Hash browns
        L- Not sure - We are supposed to be at a baptism, for my hubbies family. Who knows where we will
             be.
        D.-  Spaghetti or Tacos. Something for a crowd, because I am not sure how many I will be feeding.

Sunday:  
        B- Fruit & Muffins/Cold Cereal
        D - Our Huge Dinner:   Roast, Salads, Rolls, &  Desserts  w/ a pinata for fun. 

Baking:  Homemade Wheat Bread,  Sunday Treats, Rolls

Menu Monday

This Week's Menu     
   I have been so lucky after having this baby a little over a week or so ago for so many people helping me. I haven't had to cook a meal in about 12 days.  It has been nice & refreshing. I think every momma needs week or so off from cooking to help them take a break.  But we are getting ready to jump back into the full swing of life. So here we go with this weeks menu.

Monday:
        B- Scrambled Eggs ,
         D- Beef n' Broccoli

Recipe for Beef & Broccoli
     Cut up your choice of beef & marinate in sauce for 30 minutes  or a day before. (Keep in mind of I have not marinated the meat & just made it up & cooked it immediately & it was still delicious. )
   Sauce
    4 T. Soy Sauce                                     1 tsp. Garlic
    4 T. White Sugar                                    2 green onions cut up
    2 T. Oil                                                  1 T. Sesame Seeds

Mix everything together but the sesame seeds & add meat. Let marinade if you can, if not dump into to a pan & begin to cook until meet is almost done. Add as much broccoli as you desire & cook until done. Add sesame seeds just before serving.  Serve over rice.


We usually double the sauce recipe because we love it so much. I can't give exact amounts because at this house my boys love cooked broccoli so usually I  can't put enough in.  It is yummy, quick & I almost never make enough. Oh yeah & I never have sesame seeds at our house, so I have actually never made it with them in it.

         D- Homemade Chicken Pot Pie w/ steamed Asparagus

Wednesday:  
          B- Cream Egg on Toast,
          D- Someone is bringing me dinner again. No cooking today! : ) 
 
Thursday:
      B-     Cream of Wheat/Oatmeal
       D -  Pork Roast w/ Mashed Potoatoes


Friday: 
  B- Biscuits & Gravy
  D- Teriyaki Chicken


Saturday: 
        B.  French Toast
        D.  Steak & Potato

Sunday:  
        B- Pancakes    
        D -Since it's Mother's Day  I will let my boys decide & cook dinner.

Menu Monday & This Weeks To Do

This Week's Menu      I am trying something new & sharing the recipes for some of our meals. If you enjoy it, I  will try to share them more often & maybe one day add pictures. 

Monday:
        B- Scrambled Eggs ,
         D- Chili w/ Homemade Cinnamon Rolls


 Tuesday: 
         B- Whole Wheat Pancakes
         D- Pork Chops with Pineapple Fried Rice from Pioneer Woman

Wednesday:  
          B- Cream Egg on Toast,
          D- Beef n' Broccoli
 
Recipe for Beef & Broccoli

       D -  Chicken Roll Ups w/ Rice

Recipe for Chicken Roll Ups (Not an exact recipe, sorry)
      Cooked Chicken Breast ( I usually use 3 or 4 breast I think)
      1 -2 pkg. Cream Cheese
       2 pkgs of Pillsbury rolls
      Cornflake Crumbs
       Melted Butter

Cook chicken  & shred.  Mix with cream cheese until a nice moist  & creamy. Roll out your rolls & put a spoonful of the chicken cream cheese mixture into the roll & seal the edges.  Dip then into melted butter & roll into cornflake crumbs. Place on cookie sheet. Continue with doing that  until chicken mixture is finished. Bake at 350 Degrees for 20 minutes or until golden brown. We serve with rice & gravy made out of cream of chicken soup. Yummy!


Friday: (My Hubby's Birthday!!!)
  B- Biscuits & Gravy
  D- Date Night or  Steak. Baked Potato & Strawberry Rhubarb Pie w/ Vanilla Ice Cream


Saturday: 
        B.  French Toast  
        L:   Hot Dogs/ Brats & Salad
       D - Oriental Chicken Wraps - I will share the recipe later this week.

Sunday:  
        B- Pancakes    
        L:  Roasted Chicken w/ Garlic & Lemon
        D -Chefs Salad

Baking:  Homemade Wheat Bread, & the boys are begging for Cinnamon Rolls.

Well folks we are a back finally for another Menu Monday. I have struggled, because right now nothing sounds good. So I finally just wrote some stuff down. I hope it tastes good in the end.

Menu Monday & This Weeks To-Do


Well here is Menu Monday & this weeks to do list.  As for last weeks recipe the Caribbean pork chops were okay. Not my favorite so I probably won't make them again. The Hunts Tomatoe & pesto chicken was surprising good. (My hubby was right) So that I will probably add onto our list of menu ideas.  As for this week my hubby is out of town for the first of the week, so my cooking will be lacking until he comes home. 

This Week MENU

Monday -  Fried Chicken from Grocery store 
Tuesday - Swiss Steak with Rice
Wednesday - Herb & Garlic Steak w/ Baked Potatoes
Thursday -- Clam Chowder w/ Homemade Bread sticks
Friday -- Slow Cooker Vanilla & Honey Pork 
Saturday -- Mexican Chicken Casserole
Sunday -- Roast & Potatoes

Breakfast Ideas:  Scrambled Eggs, Fruit & Muffins, Biscuits & Gravy, Hot Cereal, Creamed Egg on Toast,  German Pancakes  & Waffles

Baking: I only made cookies last week so here is to actually getting bread made, & some sort of cookies for my hubbies lunches once he returns home.








 This last week TO DO list didn't get very far, so most of it is carry over. I am hoping to be a little more successful. I did get the sewing done for Robyn & I must say I thought they looked cute. I did finish a couple of crochet projects done. So I will post  pictures of all my finished projects later. Also my office did get cleaned so that is nice.

  • At my husbands request: ALL laundry washed & put away by Tuesday night before he gets home ?? (Questions marks because it doesn't really thrill me, but does need done).
  • Edit & Post Pictures from Blain Reception
  • Edit & Post pictures from Reed Baby Photo Shoot   (Done!!) 
  • Finish Painting my sewing Table   (Done!) 
  • Post pictures to my family blog      (Done!) 
  • Get my sewing tutorial posted on here. 
  • My pajama's Made
  • Work on Costley Baby Quilt (I have the basic design figured out now, but I just need to make some minor changes to it this week & then get the rest of the material bought so I can start putting it together). 
  • Remember this pattern for Crochet slippers, well I bought it last week & would like to try making it this week.
  • Womens House Slipper Crochet Pattern for Violet adult house slipper




   We did make our trip to the post office last week, & that was fun. I have never had a tour of the post office. We are really focusing on reading this week in home school & have our 1st official spelling test. We practice spelling words, but we don't have a "test" on them very often. So we will see if it is something we like or not.   I found some cool homeschooling stuff on pinterest this morning & may put off finishing the different classifications of animals & do a unit on the body. I have to check my overall sheet to see where I am.     
   Well I should get moving, though I am slow. Something about having my hubby out of town makes my days seem to drag. I could never be an military wife, but give huge props to those who are. Anyways Happy Monday to you all & we will see you tomorrow. Or later today. Who knows! : )

Slowly Getting Back :

Sorry for the leave of absence. Life has been crazy & wonderful. I am sure to tell you more about it later, but just letting you know we are here, & that you will get a real post tomorrow. But my husband has one more day off before he returns to work  He is still recovering from a surgery 3  days before Christmas. Nothing serious, but we have been laying pretty low.  I am excited to show you our wonderful break. Here is a glimpse on some of the fun we had. 

With more of those to come & others, along with some fun stuff from Christmas & I will finally show you my finished Christmas projects.  I couldn't show them to you before because honestly they didn't get done until Christmas Eve. But I will show you what we made the kids, but I am still trying to get back on track. So for today (a day late) I am sharing with you our Menu Monday. Which I used to do consistently, & in order to keep with my new years resolution (A whole post about that one). I am starting to share, but next week, it should be on Monday. Which was actually planned yesterday, just never posted.  For some reason I think it is always interesting to see what people eat.

Monday:  Lemon & Herb Roasted Chicken
Tuesday: Slow Cooker Parmesan Honey Pork Roast

Wednesday:   Beef Noodles (family Recipe)
Thursday: Chicken Noodle Soup & Bread sticks  w/ leftover Chicken from Monday night
Friday: Taco Salad in Homemade Crunchy Taco Bowls (Request from my 5 year old)
Saturday:  Homemade Chicken Cordon Bleu w/ Rice
Sunday:  Roast & Potatoes


Baking This Week:  Homemade Wheat Bread, Granola & Chocolate Chip Butterscotch Oatmeal Cookies (maybe)
